Chocolate Chip Muffins

 

I know this is a little pathetic, but if I have a personal speciality, its these. I can literally make these in less than 5 minutes and I find the recipe works just as well if you just chuck all the ingredients in a food processor and give it a good blitz! I always add the chocolate chips separately at the end otherwise you tend to get chocolate dust in your muffins rather than chunks. If you are looking for an awesome cupcakey alternative, add a vanilla butter cream frosting with some curls of milk and white chocolate.

 

Chocolate Chip muffins

8 oz self raising flour

8 oz margarine

8 oz caster sugar

4 eggs.

 

Cream together margarine and sugar. Sift in a quarter of the flour and one egg then mix thoroughly. Then repeat until all eggs and flour have been mixed in. Add chocolate drops and mix then divide into 12 muffin cases. Bake at 180 degrees for about 20 minutes.
