Elaine's Banana Cake

 

My friend Zoe used to always have this for her break when we were at primary school and I always used to do anything I could to nick a bit off her! My mum managed to get the recipe as I wouldn't stop getting on with it. Its light in texture and completely delicious. Its also a great way to use up over-ripe bananas.

 

4 oz margarine / butter

6 oz sugar

1 ripe banana

0.5 tsp vanilla essence

8 oz self raising flour

0.25 tsp salt

0.25 tsp bicarbonate of soda

2 eggs

1.5oz chocolate chips

 

Melt butter and sugar in a saucepan – try not to get too hot as the mixture will then melt the chocolate chips added later. Mash the banana with vanilla and mix. Sift flour, salt and bicarbonate of soda and mix with the butter and sugar. Now add eggs, banana mixture and chocolate chips. Put into a greased, lined loaf tin and bake for approx. 1 hour 40 mins at 180 degrees.
