Blackcurrant Jelly
For some reason, kids love this. I'm not sure if its because its an awesome colour or because its a bit different so has novelty value but anyway, here's a lovely recipe for it! This will make you about 2.5 kgs
Ingredients
4lbs blackcurrants
3 pints of water
0.75 lbs granulated sugar per pint of fruit juice.
Method
Wash the fruit, removing any leaves and then place in a preserving pan with about 2 pints of cold water. There is no need to remove the stalks. Bring it to the boil and simmer it for about 30 minutes or until the fruit is soft. Take it off the heat, mash up the fruit and then put it all into a muslin bag. Leave this to strain for at least 15 minutes. Next measure how much fruit juice you have made and put it back into the pan. For every pint of juice you have, add 0.75 lbs of sugar. Put this on a low heat to dissolve all the sugar. Once you have done this then vigorously boil the liquid until it reaches setting point which should take about 10 minutes. Pour into steralised jars and put this lids on whilst it is still hot.
