Mrs Cleams' Tazmanian Tomato Chutney

 

The ultimate use of a bumper crop of home-grown tomatoes! This recipe should make about 10 jars. This has to be literally one of my most sort after recipes and if you are going to try anything on here, I think it should be this! It makes a lovely accompliment to cold meats and cheeses and is a Christmas necessity in my family. Speaking of which this makes a great Christmas present.

 

Ingredients

6lb Tomatoes

1 or 2lbs or apples (ones that reduce to a pulp.)

0.5 lb sultanas

2 small cups of malt vinegar

2.5 lb brown sugar

1 tbsp medium curry powder

0.5 tsp Cayenne pepper.

1 medium courgette

4 medium onions

 

Method

Cut the onions, skin the tomatoes and chop the courgettes into small chunks. Sprinkle with a small amount of salt and leave overnight. Next day put the onion, tomato and courgette into a big pan and add the chopped apples and vinegar and bring to the boil. Boil for 5 minutes and then add sugar, stirring until the sugar has dissolved. Boil until thick and mushy which should take about 45 minutes. Pot and label.

 

Serving suggestions

This is great with cheese and biscuits, in sandwiches and also great with cold meats and mashed potato.
