Strawberry Jam

This can be a lovely one to make. We never used to grow strawberries in our garden but my mum used to take us to the local pick your own farm up the road. We used to have some strawberries for our tea and some went into jam. This recipe makes about 2kgs
Ingredients
4lbs strawberries
3.5lbs granulated sugar
2 lemons
Method
Wash and hull the strawberries and put into a pan. Crush a few at the bottom which will help the other fruit to stew as they cook. Cook on a very low heat for about 15 minutes or until the fruit is very soft and the juice comes out. Add the sugar keeping the heat low and stir until it is all dissolved. Next add the juice of the lemons and then boil vigorously until setting point is reached. Only stir it to prevent it sticking. This jam can get a scum on the top which should be scooped off as it rises. In this case allow the jam to go half cold before putting it into the jars so that the fruit is evenly distributed through the jam.
