Vegetable Broth

Ingredients

1 Carrot

1 Parsnip

0.5 small turnip

1 onion

2 sticks of celery

1 leek

1oz butter

1.5 pints water

1 level tablespoon of barley

1 teaspoon of salt

 

Method

Chop and cice up the carrot, parsnip, leek, onion, celery and turnip. Cook the veg slowly in the butter in a covered pan ensuring the vegetable mix doesn't brown. Add the water, salt and barley, then boil. Simmer slowly on a very low heat for about 1.5 hours or until the barley is soft. Serve and garnish with some chopped parsley
