Yellow Soup

I know this is a rubbish name, but actually I quite like it cos it is what it says, and its tasty as. Its an original of mine.

 

Ingredients

1 butternut squash

1 clove of garlic

1 tin of butter beans in water

2 sweet potatoes

2 carrots

1 onion

2 pints of vegetable stock

salt and pepper to taste

A swirl of creme fraiche

 

Method

Peel and chop up all the veggies and put in a roasting tin with a dollop of olive oil. Add the butter beans and roast at 180 degrees for about 40 mins or until the vegetables have gone soft. Blend to a smooth puree with the stock, reheat and serve with the salt and pepper and creme fraiche. If you like spicy add a chilli to the roast mix.
